    With the cold spell we’re getting, chili is the best thing to warm you up (although, when isn’t a good time for chili?). This chili will need some prep the day before, but it’s an easy and simple recipe!

    Ingredients

    • 1 lb ground lamb
    • 1 package HAMBEENS 15 BEAN SOUP®
    • 1 onion, diced
    • 1 green bell pepper, diced
    • 1 can diced tomatoes with green chiles
    • 1 can (6 oz) tomato paste
    • 8 cups vegetable broth

    Chili seasoning

    • 1 Tbsp chili powder
    • 1 tsp ground cumin
    • 1/4 tsp cayenne pepper
    • 1/4 tsp garlic powder
    • 1/2 tsp onion powder
    • 1 tsp salt
    • 1/4 tsp approximately freshly ground pepper

    The night before, pour beans in a large covered container and cover with 2 inches of water. Let sit.

    In the morning, drain the water and rinse the beans. They should not be hard by this point.

    Combine chili seasoning ingredients and set aside.

    Brown the lamb and drain any fat.

    In a 6 qt slow cooker, combine lamb, beans, onion, pepper, and broth. Stir in half the chili seasoning.

    Let cook for 5-6 hours or until beans are tender.

    Add in diced tomatoes, tomato paste and remainder of chili seasoning. Cook for an additional 30 minutes.

    Voila! Serve it with saltines or just by itself. We liked it with melted cheese on top. Enjoy!

    The most common question we get asked is “So what do I do with lamb?” Easy! You can use lamb the same way you use beef for a healthier, leaner meal. But we all need to treat ourselves every once in a while. So try these awesome lamb nachos for that indulgent, binge-watching, pajama-wearing night in!

    Ingredients

    • 1 lb ground lamb
    • 1/4 cup taco seasoning
    • 2/3 cup water
    • tortilla chips (We like “On the border” Cafe style)
    • cheese
    • toppings of choice (jalapenos, salsa, sour cream, beans, etc.)

    With a bit of oil, cook beef in a skillet until browned, approximately 6 to 7 minutes. Stir in water and seasoning mix. Simmer on low heat until thickened.

    Spread tortilla chips onto baking sheet. top with lamb and cheese. Broil in oven until the cheese is melted and bubbly. Top with whatever you like. Nacho night for the win!

  • Greek-Style Lamb Burgers - Be the king of backyard cookouts with these Greek Lamb Burgers ...

    Lamb can be cooked just like beef burgers, but sometimes you want something with a little extra kick! This burger recipe will make your backyard cookouts the talk of the town!

    Prep time: 20 minutes
    Cook time: 10 minutes
    Total time: 30 minutes
    Yield: serves 8

    • 2 lb ground lamb
    • 1 small red onion
    • 2 garlic cloves
    • 1 cup fresh chopped parsley
    • 10 mint leaves
    • 2 ½ tsp oregano
    • 2 tsp ground cumin
    • ½ tsp paprika
    • ½ tsp cayenne pepper, optional
    • Salt and pepper to taste
    • Extra virgin olive oil
    • Buns and toppings of choice

    Heat an outdoor gas grill on medium for 20 to 30 minutes or so, meanwhile, prepare the meat mixture, buns and fixings for the burgers.

    Add the ground lamb to a mixing bowl. Add grated onions, garlic, fresh herbs, oregano, cumin, paprika and cayenne. Season with kosher salt and pepper. Add a generous drizzle of extra virgin olive oil, and mix until everything is well combined.

    Divide the meat mixture into 8 equal balls. Using both hands, work meat into smooth spheres, then lightly press to form into patties. Arrange the patties on a large tray or dish, and with the tip of your thumb, press lightly to form a shallow, somewhat wide, depression into the center of each patty. Cover and refrigerate until grill is ready.

    Lightly oil grill grates and arrange the burger patties on top. Grill over medium heat, covered, for 4 to 5 minutes on each side, turning once midway through cooking (internal temperature for a medium burger should register 160 degrees F. Adjust cooking time according to your desired doneness.)

    Allow the lamb burgers to rest for 5 to 10 minutes before serving. Serve with buns of choice and toppings.
